FITNESS NANAIMO CHEESECAKE

INGREDIENTS:

THE BASE

  • 30g pecans
  • 100g sugar-free chocolate biscuits
  • 70g sugar-free biscuit (without flavour)
  • 3 tablespoon coconut flakes
  • 75g butter

CHEESECAKE LAYER

  • 500g ricotta cheese (room temperature)
  • 250g light mascarpone (room temperature)
  • 100g xylitol or other sweetener
  • 30g vanilla pudding powder
  • 1 tsp Vanilla flavdrops
  • 3 whole eggs
TOPPING
  • 250ml heavy whipped cream
  • 100g chocolate 70% (sugar-free)

METHOD: 

  1. Use the mixer to crush all the biscuits, pecans and coconut flakes. Add the melted butter and mix it all together.
  2. Place the mixture into the baking form and spread it evenly to every corner using a fork.
  3. Bake for 8 minutes at 160°.
  4. Meanwhile mix together ricotta, mascarpone, flavdrops, sweetener, pudding powder and eggs.
  5. Pour the mixture on the pre-baked base and bake for another 60 minutes in a water bath.
  6. After it is baked let it cool in slightly opened oven and then place into the fridge.
  7. Meanwhile heat up the whipped cream, add the chocolate and stir until melted.
  8. Remove from the heat and let it cool down until room temperature.
  9. Lastly, pour the topping on the cheesecake layer and let it chill in a fridge for a few hours.
